Because we make maple syrup, I am always looking for ways to use it in recipes. One of my favorite ways recently has been Maple Teriyaki Pork Stir Fry. Stir fry tends to happen around here fairly often do the frugal nature of it. This is just one way to shake it up. This whole recipe takes about 25-30 minutes from start to finish. Most of our meals are not only frugal but also quick.
(Please pardon the terrible pictures. My kitchen is not a very light friendly place.)
You will need:
1 lb of pork chunks
1 onion, chopped
4 large carrots, chopped
1 cup frozen broccoli florets
1 cup frozen peas
1 cup rice
salt and pepper, to taste
Sauce:
1/2 cup soy sauce
1/4 cup maple syrup
1/2 teaspoon ginger
1/2 teaspoon garlic powder
1 teaspoon cornstarch
1. Cook rice according to package instructions.
2. Heat up a large pan on medium-high heat. I add about a tablespoon of olive oil to my pan. Once it is hot, add in the onion and carrot. Add salt and pepper to taste.
3. Once the veggies are starting to get soft, add in the pork.
4. While that is cooking, you need to prep the broccoli and peas and make the sauce. To prep the broccoli and peas, put them in a microwave safe bowl and cook 5 minutes, just enough to thaw out.
Mix all the sauce ingredients together and set aside.
5. Once the broccoli and peas are done in the microwave, add them to the pan with the onion, carrot, and pork. Continue cooking until pork is cooked through and the veggies are all cooked. Add in the teriyaki sauce and cook until it starts to thicken. Add in the cooked rice. Stir and allow to cook about two more minutes.
6. Eat!

It is so good. The first time I made it, Matt texted me at lunch the next day: “I am so lucky to have a wife who can make Chinese food at home!” 🙂 I think it made up for some recent dinner flops. lol
